The recipe I’m sharing today is dhaba-style but made in a home-style way. You’ll get the same great taste, but it’s an easier and simpler method with basic ingredients. It’s really delicious!

You have to wash and chop it.
Let’s see how to do that. I’ve got a large bunch of spinach here. You need to wash it really well, chop it up, and then pad dry it. I’ve already done that part, so now just chop it up. You can see how it looks.

I have three medium-sized potatoes cut up here. Carefully add the potatoes to the oil because they were soaked in water, so the oil might splatter a bit. Be cautious while adding them. Cook the potatoes on medium to medium-high heat until they are about 85 to 90% done.
But the potatoes should be cooked well and should take on a nice color on the outside, and they should be almost fully cooked. So, keep stirring them occasionally to make sure they cook evenly.

We’ll start with 1/4 teaspoon of turmeric powder, 2 teaspoons of Kashmiri red chili powder, 1 tablespoon of coriander powder, 1/4 teaspoon of cumin powder, half a teaspoon of amchur powder, and a little warm water to prevent the spices from burning.
This way, we can roast them well. Keep stirring and cook the spices for about one to two minutes. You’ll see that the spices are nicely roasted. At this point, chop up two medium-sized tomatoes and toss them in, along with some salt to taste.

We need to evaporate that water on high heat and sauté the spinach well with the spices. Keep stirring it nicely with the spices. You can see I’ve cooked off the water from the spinach, and it’s done now.
We need to adjust the consistency a bit on stage. I’m adding some warm water to get the spinach mixture a little smoother, as you can see. I’ve added water and let it cook for about two or three minutes.
Once it’s cooked well, add the fried potatoes we set aside earlier. Also, squeeze in some lemon juice and give it a good stir. You don’t need to cook the potatoes and spinach too much.
