How to make gram flour

1.First you have to take the gram floor of 3 cups.

2. Then add salt to taste

3. Then add Ajwain ( optional)

4. Then add a pinch of baking soda

5. Add water gradually and then whisk continuously to ensure no lumps are formed intially make a thick batter and then mix well!

6. Now add a little more water to adjust the consistency and the batter should not be too thick nor too thin!

7. Now whisk well with a whisk or with your hand for 3 to 4 minutes!

8. Rest the batter for a minimum of 30 minutes

9. Now the gram flour batter is ready and requires to be rested for atleast 30 minutes and the resting part is very important plz do not skip the rester part!

How to make spicy green chutney

1.Add green chillis of 4 to 55 pieces

2. Add garlic 5 to 6 cloves 

3. Add ginger of small piece

4. A pinch of salt

5. Grind into a paste using a mortar pestle or take a mixer grinder and then add little water to grind easily!

6. And yes spicy green chutney is ready

How to make vada mixture

1.Add oil of 2 tbst

2. Add Rai ( Mustard seeds of 1/4 tsp

3, Add Jeera ( Cumin seeds) of 1/2 tsp

4.Add Hing ( Asafoetida) of 1/4 tsp

5.Add kadi patta (Curry leaves) of 8 to 10 nos.

6. Add the chilli garlic paste

7. Stir and cook on medium flame for 1- 2 minutes.

8.  Add Haldi (Turmeric) of 1/2 tsp 

9. Add salt to taste

10. A pinch of garam masala and then briefly cook for 30 seconds

11. Add Aloo ( Potatoes) 8 to 10 medium sized ( Boiled and mashed)

12. Cook for 5 to 6 minutes on medium high flame

13. Mash the potatoes nicely with the spatula and then add lemon juice of 1 tbsp and then add handful of fresh coriander and then stir and mix well!

14. Transfer to the bowl and allow them to cool down!

15. give another mix just before frying

16. Dip fingers in the batter and then randomly pour in hot oil to make the chura and then fry on medium flame until crisp and golden brown!

17. Let the besan chura cool down a little bit!

18. Garlic 8 to 10 cloves (with skin)

19. Prick with a toothpick to avoid popping of oil while frying and then fry for 30 to 40 seconds in hot oil and be careful as the oil may splutter.

20. Fried garlic cloves 

21. Fried chura of 2 cups

22. Fried garlic cloves and salt to taste and then kashmiri red chilli powder of 3 tbsp

23. use pulse mode and coursely grind the mixture

   And yes vadapav sukha chutney is ready!

How to make green chilli

the delight of mumbai vada pav – Make a slit in the centre without cutting through and then briefly fry the chillies for 15 to 20 seconds in hot oil a large pinch of salt and mix well!

                And yes fried chilli for vadapav is ready!

the delight of mumbai vada pav – Take a big spoonful of vada mixture and then shape into roundels and then you can fry the vadas in a round shape of flatten it and now i am flattening it before coating it with the batter and then heat the oil for frying the vadas on high flame and then dip and coat well with the batter and you can also use your thumb and fingers to even out the batter and deep fry in hot oil on medium high flame until crisp and golden brown and once the vadas take shape, slightly lower the flame to medium and then fry until crisp and fry some extra chura to serve with vadapav and yes your vadapav is ready! the delight of mumbai vada pav
