How to make crispy chilli potatoes
- Potatoes – 5-6 medium sized (Peeled)
- Trim the sides of the potatoes
- Cut into 1cm thick & 2-3 inches long batons
- Add the potatoes into boiling water
- A pinch of salt
- Cook the potatoes in boiling water until its 75% cooked
- Allow to cool down
- Cornflour – 1/2 cup
- Maida ( Refined flour) – 1/2 cup
- Baking powder – 1/4 Tsp
- Salt to taste
- A pinch of black pepper powder
- Add water as required to prepare a semi – thick batter
- Whisk well to make a smooth lump – free batter
- Coat the potato batons well with the batter
- Deep fry in hot oil on medium high heat until crisp & light golden brown
- Crispy potatoes are ready!
Batter fried potatoes turn out very crispy, They stay crispy even after you toss them in the sauce, if you want to skip the batter process, then you can sprinkle some dry cornflour over some blanched boiled potatoes and then fry them on high heat, potato crispy chilli recipe – I prefer the batter frying process to prepare crispy chilli potatoes, You can also toss these crispy potatoes in some schezwan sauce, hot garlic sauce or kung pao sauce, Today i am giving recipe chilli potatoes!
How to make chilli sauce
- Heat the wok really well!
- Oil – 2 TBSP
- Onions – 1/4 cup (Chopped)
- Garlic – 1/4 cup (chopped)
- Ginger – 1/2 inch ( chopped)
- Coriander stems – 1 TBSP ( chopped)
- Stir & cook on high flame for a minute
- Green chillies – 12-15 NOS
- Green chilli paste of 3-4 chillies
- Veg stock / hot water – 150-200 ML
- Stir well
- Light soy sauce – 2 TBSP
- Dark soy sauce – 2 Tsp (For colour)
- Vinegar – 1 Tsp
- A pinch of sugar
- Salt to taste
- A pinch of white pepper powder
- Stir well
- Capsicum – 1/3 CUP
- Onions – 1/3 cup
- Spring onion bulbs – 2 TBSP
- Fresh coriander – 1 TBSP
- Cornflour – 1 TBSP + Water – 50 ML
- Add the cornflour mixture & cook until the sauce thickens
- Lower the flame & add the fried potatoes
- A handful of spring onion greens
- Stir & coat the potatoes with the sauce
- Do not overcook to avoid the potatoes from getting soggy
- Crispy chilli potatoes is ready!
