How to make dal tadka and jeera rice with food taaza style – Dal tadka is going to be exactly like the one that you get in restaurants or dhabas! Now, when you make dal at home, its made quite differently. Ingredients are same in both the dals, be it the lentils or the tempering. But that dal tastes vastly different in restaurants or dhabas!

 

Although no special ingredients are added to that, it tastes really different. The reason for that is, a tip or method which is followed in restaurants, and that is what makes the dal taste really special. How to make dal tadka and jeera rice with food taaza style – What is that special method, i am going to show in this video. Its a very easy method.

How to make dal tadka and jeera rice with food taaza style – There is no need for any extra ingredients or equipment. I am going  to show you how to make the same dal at home. Once the dal tadka is made, then we will give a double tadka in my style & then i am going to make Jeera rice! We will also make Tandoori roti and some side dishes!

Process of making dal tadka

1.In a big bowl take 1/2 cup tuvar or arhar dal. ( Pigeon peas)

2. Tbsp chana dal.

3. Add 2 Tbsp masoor dal.

4.How to make dal tadka and jeera rice with food taaza style – Now, add lots of water to it & wash the lentils. There may be lots of powders or pesticides on them. Wash them out thoroughly until the watering the lentils runs clear. Once you’ve washed the lentils, then you have to add lots of water & soak the lentils. Soak the lentils for 1/2 – 1 hour.

5.How to make dal tadka and jeera rice with food taaza style – After 1/2- 1 hour, you will see that your lentils will have swelled up like & will be nicely soaked. Remove the water. After adding the water, transfer the soaked lentils in a pressure cooker. Along with that add a slit green chilli, salt to taste, 1/4th tsp turmeric powder, 1 inch julienned ginger, & add 3 times amount of water tto the lentils.So, you can add about 2-1/4th or 2-1/2 cups of water.

6. Cover the lid & cook these lentils on medium high flame for 3-4 whistles. Once you’ve cooked the lentils, let the pressure cooker naturally de-pressurise & the steam settle naturally & check the whistle. 

7. Only then remove the lid. Remove the green chilli that was added. You can see that our Dal is cooked. I’m just going to lightly stir it. How to make dal tadka and jeera rice with food taaza style!You can see that the Dal isn’t looking too soupy

8.It still has a bit of texture to it & our Dal is nicely cooked. This is how your Dal should be cooked. 

9. So, we’ve cooked the Dal. Even in restaurants or dhabas, the dal is boiled kept aside like this.

how to add tadka on dal

  1. Take a fry pan
  2.  heat the fry pan really well
  3. once your fry pan is hot, then add 2 tbsp ghee to it.
  4. After adding the ghee, heat it up as well.
  5. Now, add 1 tsp cumin seeds to it.
  6. 1 dried red chilli, 
  7. 1 tbsp chopped ginger,
  8. 2-3 chopped green chillies.
  9. saute all these things on medium flame for 1-2 minutes.
  10. Once you’ve sauteed ginger & garlic, then add 1 chopped onion to it.
  11. After adding the onions saute them on high flame.
  12. until it starts changing the colour lightly.
  13. cook the onions until they are translucent & start changing their colour.
  14. At ths stage, add 1 chopped tomato to it & add salt to taste.
  15. Now continue to cook while stirring on a high flame.
  16. All your cooking of the tempering is on high flame, That’s very important.
  17. Cook the tomatoes for 2-3 minutes, until they are slightly mushy.
  18. The smoking of the pan while cooking everything on high flame is very important.
  19. How to make dal tadka and jeera rice with food taaza style-Once the tomatoes are mushy, then to this add 1/4th tsp turmeric powder, 1/2 tsp kashmiri or degi red chilli powder, 1/2 tsp coriander powder, & add a pinch of garam masala & stir quickly.
  20. Now add a splash of water & then tilt your pan slightly & shake it.
  21. You’ll see the flames reaching the sides of the pan. Be very careful!
  22. Obviously you may not be used to it. So , do it very carefully.
  23. When you tilt & cook the tempering like this, then the flames come into your pan, It starts smoking & gives a smoky flavour to the dal.
  24. This is the secret to the dal in a restaurant or a dhaba, which has that smoky flavour & this is the process of cooking on high flame so that  everything is smoking & the flames are reaching into your pan.
  25. How to make dal tadka and jeera rice with food taaza style – Once you have cooked the tempering like this for just a few seconds, Most of your job is done. Add the cooked dal to this & mix the tempering with the dal nicely!

  26. After mixing the dal with thee tempering like this, boil the dal nicely for 2-3 minutes.
  27. After 2-3 minutes, add a pinch of roasted kasuri methi, 1/2 tsp dried mango powder, 1tbsp butter & add freshly chopped coriander leaves. Nicely mix everything together, you can see that the consistency of our dal is slightly thicker, just like the dal at restaurant or dhaba, Which is thicker.
  28. How to make dal tadka and jeera rice with food taaza style – If you want, you can water it down a bit, but it wont give same results as it you keep the dal on the thicker side & you can see that our restaurant style or dhaba style dal tadka is ready!

How to make jeera rice

  1.   1.Take 1 cup basmati rice in a big bowl.
  2. Now add lots of water & wash the rice gently, until the water with which you are washing the rice turns absolutely clear.
  3. Once the water is clear, then you have to soak the rice in plenty of water for about 1/2 an hour.
  4. How to make dal tadka and jeera rice with food taaza style – Once you have soaked the rice for 30-45 minutes, then discard the water from the rice.
  5. Now, in a stock pot, bring water to a rolling boil, Make sure that the water is nicely boiling.
  6. To this, Add salt to taste
  7. Along with it add 1 tsp lemon juice & the peel of the lemon too.
  8. This makes the rice fluffy & white.
  9. Now, we have to add soaked rice to it & within 4-5 minutes, your rice will be nicely cooked.
  10. Don’t stir the rice too much, just stir it once or twice in between.
  11. Cook it for 4-5 minutes, After 4-5 minutes, you will see that the rice grains will have fluffed up nicely.
  12. How to make dal tadka and jeera rice with food taaza style – To test it , take a couple grains of rice & taste them. If they have a slight bite to them, which means that your rice is cooked.
  13. Here, my rice is cooked. I’m straining them using a strainer & I’m adding them to a sieve. After straining the rice, let them be in a sieve to let all the excess water to drain out.
  14. Now using a fork, fluff up the rice lightly so that the excess steam can escape too and let the rice rest & cool down like this until they are cooked down before tempering them.
  15. Once your rice has cooled down, add desi ghee to a wok, Once the ghee is hot , then add 1 tsp cumin seeds to it. After adding it, it is important that the cumins seeds should crackle.
  16. Now, add rice to it & add salt to taste & add freshly chopped coriander leaves,& now genly mix or toss the rice along with the tempering.
  17. How to make dal tadka and jeera rice with food taaza style – You don’t need to cook the rice too much here, just cook it for a minute or two, just until the rice mix & heat up nicely with the tempering & you can see that our Jeera rice is  ready!
